Hummus with roasted carrots and spiced, grilled chickpeas

Plain hummus

Ingredients

– 350 g plain hummus
– 500 g carrots
– 200 g cooked chickpeas
– olive oil
– salt and pepper
– cumin
– Espelette pepper

Preparation

Preheat the oven to 180°.

Wash the carrots, remove tops and cut into two lengthways.

Place the carrots in an oven dish.

Drizzle well with olive oil, salt and sprinkle with cumin.

Bake in the oven for about 20 minutes until the carrots are soft.

In another bowl, place the cooked chickpeas, drizzle well with olive oil and salt. 

Sprinkle with cumin and Espelette pepper and bake in the oven for 15 minutes.

Savour the hummus with the chickpeas and the sticks of carrot with cumin.

Ideal for a healthy aperitif or a comforting lunch.
